Curried chicken mayo & broccoli

Creamy curry chicken  and broccoli - so good, hot or cold

Ingredients


  • 2 cups cooked chicken, chopped or shredded

  • ⅓–½ cup mayo

  • 1–2 tsp curry powder (to taste)

  • 1 tsp lemon juice

  • Salt + pepper


Broccoli side


  • 2–3 cups broccoli florets

  • Salt

  • Optional: drizzle of vinaigrette


Method


  1. Mix chicken + mayo + curry powder + lemon + salt/pepper. Add any extras.

  2. Steam or boil broccoli until just tender (bright green), then cool completely.

  3. Combine the chicken and broccoli so that the broccoli is coated with the mayonnaise dressing. 

  4. Serve warm or cold. 


Storage


  • Keeps up to 3 days in the fridge.


Foxy extras


  • For extra flavour and crunch, add any of the following - sliced red onion, sliced gherkin, sliced celery.

  • This meal is delicious hot or cold 

  • When eating as a salad, consider topping with aragula or lettuce leaves or or red radish sprouts - yum
