Baked chicken + mustard mayo

Meal-prep chicken with a creamy mustard mayo you’ll want on everything

Ingredients


  • 2–4 chicken breasts or boneless, skinless chicken thighs

  • Salt + pepper

  • ½ tsp garlic powder (optional)


Creamy mustard mayo


  • 3 Tbsp mayo

  • 1–2 Tbsp Dijon or wholegrain mustard

  • 1 tsp lemon juice or apple cider vinegar


Method


  1. Heat oven to 200°C. Season chicken with salt/pepper (and garlic if using).

  2. Bake 18–25 min until cooked through. Rest 5 min.

  3. Mix the mustard mayo. Spoon over chicken to serve.


Storage


  • Cooked chicken keeps 3–4 days in the fridge.
