Baked chicken + mustard mayo
Meal-prep chicken with a creamy mustard mayo you’ll want on everything

Ingredients
2–4 chicken breasts or boneless, skinless chicken thighs
Salt + pepper
½ tsp garlic powder (optional)
Creamy mustard mayo
3 Tbsp mayo
1–2 Tbsp Dijon or wholegrain mustard
1 tsp lemon juice or apple cider vinegar
Method
Heat oven to 200°C. Season chicken with salt/pepper (and garlic if using).
Bake 18–25 min until cooked through. Rest 5 min.
Mix the mustard mayo. Spoon over chicken to serve.
Storage
Cooked chicken keeps 3–4 days in the fridge.
